WINTER GLOW SALAD

One of you lovely souls asked for the recipe for when I shared this salad on Instastory, it’s so simple, but I thought I would share it with you here if there were more of you interested in making this delicious Winter Glow Salad πŸ’•πŸŒ±πŸ₯‘

It’s honestly SO simple, but also SO delicious and healthy - just like I love it 😍 I often don’t spend hours cooking anything fancy, it’s rather just really simple, healthy, but also so delicious!

  • Cut sweet potatoes out in small chunks, drizzle olive oil, salt and sweet paprika over and bake in oven for about 30 minutes (180 degrees celcius)

  • Cut brusselsprouts in half drizzle with olive oil, salt and pepper

  • Canned chickpeas (rinsed thoroughly with water), drizzled with olive oil, salt and pepper

  • Bake brusselsprouts & chickpeas for about 15-20 minutes (180 degrees celcius)

  • Boil broccoli for 4 minutes in water with some salt

  • Mix it all together + add some fresh salad mix, avocado and sunflower seeds
